  • 12 pieces small mozzarella balls (bocconcini) Stuffed into the cherry tomatoes.
  • 12 leaves fresh basil leaves One per tomato.
  • 12 pieces black olives Used for the pupils.
  • to taste salt For seasoning.
  • to taste pepper For seasoning.
  • 1 bottle balsamic reduction For the 'bloody' drizzle.
  • as needed skewers or toothpicks For assembly.

Method

Preparation
  1. Use a sharp knife to slice the top off each cherry tomato, creating a small cavity.
  2. Carefully place a small mozzarella ball inside each tomato. Press down gently to fit it snugly.
  3. Place a fresh basil leaf on top of the mozzarella, allowing it to peek out for that authentic look.
  4. Slice black olives into small rounds and place one on top of each mozzarella ball, mimicking the pupil of an eyeball.
  5. Slide a toothpick or skewer through the assembled eyeball, starting from the base, to hold everything in place.
  6. Plate your caprese bites and drizzle them generously with balsamic reduction to finish the look.
  7. Add a pinch of salt and pepper to taste, and enjoy your spooky bites!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 2 days. Serve them fresh for the best taste, and avoid reheating as tomatoes may become mushy.
