  • 2 medium medium oranges (preferably organic, as you’ll use the peel) Fresh organic oranges provide the best flavor.
  • 1 cup sugar
  • 1 cup flour
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 teaspoon baking powder
  • a pinch salt

Method
 

Preparation
  1. Wash your oranges thoroughly. Cut them into quarters, removing any seeds while leaving the peel intact.
  2. In your blender, combine the quartered oranges with sugar and blend until smooth. This should take about 1-2 minutes.
  3. Pour in the vegetable oil and add the eggs, blending a little longer until everything is well-mixed, around 30 seconds.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the blended orange mixture to the flour mixture, stirring gently until just combined—don’t overmix!
Baking
  1. Pour the batter into a greased cake pan. Bake in a preheated oven at 350°F (175°C) for about 30-35 minutes or until a toothpick comes out clean.
  2. Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Serve with a dollop of freshly whipped cream or a scoop of vanilla ice cream. For added texture, sprinkle with toasted nuts or serve with a fresh citrus salad.
