Preparation
- Wash your oranges thoroughly. Cut them into quarters, removing any seeds while leaving the peel intact.
- In your blender, combine the quartered oranges with sugar and blend until smooth. This should take about 1-2 minutes.
- Pour in the vegetable oil and add the eggs, blending a little longer until everything is well-mixed, around 30 seconds.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the blended orange mixture to the flour mixture, stirring gently until just combined—don’t overmix!
Baking
- Pour the batter into a greased cake pan. Bake in a preheated oven at 350°F (175°C) for about 30-35 minutes or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring it to a wire rack.
Notes
Serve with a dollop of freshly whipped cream or a scoop of vanilla ice cream. For added texture, sprinkle with toasted nuts or serve with a fresh citrus salad.
