Preparation
  1. Preheat your Blackstone griddle to medium heat for about 5 minutes.
  2. In a mixing bowl, combine the shredded cooked chicken with the hot honey BBQ sauce, ensuring every piece is well coated.
  3. Lay one tortilla flat on a clean surface. Spread a generous portion of the BBQ chicken mixture on one half of the tortilla, then sprinkle with cheddar cheese and pepper jack cheese. Fold the tortilla over to create a half-moon shape.
Cooking
  1. Drizzle olive oil on the preheated griddle. Place your assembled quesadilla on the griddle and cook for 3-4 minutes until golden brown and crispy. Carefully flip it and cook the other side for an additional 2-3 minutes, until the cheese is melted and bubbly.
  2. Remove from heat and let it rest for a minute before slicing into wedges. Garnish with chopped green onions and more hot honey if desired. Enjoy with your favorite sides!
