Preparation
  1. Preheat the Blackstone Griddle to medium-high. For a skillet, heat over medium.
  2. Spread the hash browns evenly on the surface, season with salt and pepper, and cook for about 5-7 minutes until crispy and golden brown, flipping halfway through.
  3. Sprinkle the diced bell peppers and onions over the cooked hash browns, allowing them to cook for an additional 2-3 minutes until tender.
  4. In a bowl, whisk the eggs and season with a pinch of salt and pepper. Pour the egg mixture evenly over the hash browns and veggies, swirling gently.
  5. Sprinkle the shredded cheese on top, cover, and let it cook for about 5 minutes or until the eggs are set.
  6. Slide the omelette onto a cutting board, cut into wedges, and serve hot.

Notes
