  • 2 medium zucchinis, sliced into rounds or half-moons Make sure zucchinis are fresh for the best flavor.
  • 2 tablespoons olive oil Can substitute with avocado oil if desired.
  • 1 teaspoon salt Adjust to taste.
  • 1/2 teaspoon pepper Freshly ground is recommended.
  • 1 teaspoon garlic powder For enhanced flavor.
  • 1/4 cup Parmesan cheese (optional, and ensure it’s Halal-certified) Add during the last minute of grilling.

Method
 

Preparation
  1. Wash the zucchinis thoroughly.
  2. Cut them into slices about 1/4 inch thick.
Seasoning
  1. In a large bowl, combine the zucchini slices with olive oil, salt, pepper, and garlic powder.
  2. Toss until every piece is coated.
Grilling
  1. Preheat your Blackstone griddle to medium-high for about 5 minutes.
  2. Place the seasoned zucchini slices on the hot griddle.
  3. Cook for about 3-4 minutes per side until char marks are visible and zucchini is tender.
  4. If using Parmesan, sprinkle it on during the last minute of grilling to melt.
Serving
  1. Remove the grilled zucchini from the griddle and serve hot.
  2. They pair beautifully with grilled chicken or can be enjoyed on their own.

Notes

Store leftovers in an airtight container in the fridge for 3-4 days, or freeze in a single layer for up to a month. Reheat on a skillet or griddle.
