Blackberry Popovers

These **Blackberry Popovers** are light, airy, and bursting with juicy blackberries in every bite. With their crisp golden-brown exterior and soft, custardy interior, they are a delightful twist on the classic popover.

Equipment

  • Measuring cups and spoons
  • Mixing bowls
  • Whisk
  • - Blender (optional, for smoother batter)

Ingredients
  

  • - 3 large eggs room temperature
  • - 1 cup whole milk warm (not hot)
  • - 1 cup all-purpose flour
  • - 1 tablespoon granulated sugar
  • - 1/2 teaspoon salt
  • - 1 teaspoon vanilla extract
  • - 1 tablespoon unsalted butter melted
  • - 3/4 cup fresh blackberries halved

Instructions
 

  • #### **Step 1: Preheat the Oven & Prepare Pan**
  • Preheat oven to **425°F (220°C)**.
  • Generously grease a **popover pan or muffin tin** with butter or nonstick spray.
  • Place the pan in the oven for **5 minutes** to heat up—this helps the popovers rise.
  • #### **Step 2: Make the Batter**
  • In a **mixing bowl**, whisk together **eggs, warm milk, vanilla extract, and melted butter** until smooth.
  • In a separate bowl, whisk together **flour, sugar, and salt**.
  • Gradually add dry ingredients to the wet ingredients, whisking until the batter is smooth. (For extra smooth batter, blend in a blender for **20 seconds**.)
  • #### **Step 3: Assemble & Bake**
  • Carefully remove the hot pan from the oven and immediately pour batter into each cup, filling them **about 2/3 full**.
  • Drop **2-3 blackberry halves** into each cup.
  • Bake for **15 minutes at 425°F**, then reduce temperature to **350°F (175°C)** and bake for another **10-12 minutes** until puffed and golden brown.
  • #### **Step 4: Serve & Enjoy**
  • Remove from the oven and let cool for **5 minutes**.
  • Dust with **powdered sugar**, drizzle with **honey**, or serve with **whipped cream**.
