Preparation
- Preheat your oven to 350°F (175°C).
- Grease an 8x8-inch baking dish or line it with parchment paper.
- In a bowl, whisk together the flour, sugar, and salt until combined.
- In another bowl, combine the melted butter, eggs, and vanilla extract. Whisk until smooth.
- Gradually add the wet mixture to the dry ingredients and stir until just combined.
- Gently fold in the crushed pistachios and blackberries, being careful not to mash the berries.
- Pour the batter into the prepared dish and spread it evenly.
Baking
- Bake for 25-30 minutes, or until golden and a toothpick comes out clean from the center.
- Remove from oven and let cool in the pan. Dust with powdered sugar if desired, slice into bars, and serve.
Notes
Store in an airtight container at room temperature for up to four days or refrigerate for up to a week. To freeze, wrap each bar tightly in plastic wrap. Reheat in the microwave as needed.
