Ingredients
  

For the Crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cup unsalted butter, melted
  • 0.25 cup granulated sugar
For the Filling
  • 1 cup fresh blackberries (plus some for garnish) Use fresh for the best flavor.
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
For the Topping
  • 0.5 cup chopped pistachios
  • 0.5 cup whipped cream Optional, for serving.

Method
 

Prepare the Crust
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until combined.
  3. Press the mixture evenly into the bottom of a greased 9x9-inch baking dish.
  4. Bake for 10 minutes. Remove from the oven and allow to cool slightly.
Make the Filling
  1. In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
  2. Add the vanilla extract and mix well.
  3. Gently fold in the fresh blackberries, ensuring they are evenly distributed but not completely mashed.
Assemble the Bars
  1. Pour the blackberry mixture over the cooled crust, smoothing it out evenly.
  2. Sprinkle the chopped pistachios over the top of the filling.
Chill and Serve
  1. Refrigerate the bars for at least 3 hours to set properly.
  2. Once set, slice into squares and serve with whipped cream, if desired.
  3. Garnish with additional blackberries and chopped pistachios for a beautiful presentation.

Notes

For best flavor, use fresh, ripe blackberries. Allow sufficient chilling time for proper texture.
