Method
Prepare the Crust
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix well until combined.
- Press the mixture evenly into the bottom of a greased 9x9-inch baking dish.
- Bake for 10 minutes. Remove from the oven and allow to cool slightly.
Make the Filling
- In a medium bowl, beat the softened cream cheese and powdered sugar until smooth.
- Add the vanilla extract and mix well.
- Gently fold in the fresh blackberries, ensuring they are evenly distributed but not completely mashed.
Assemble the Bars
- Pour the blackberry mixture over the cooled crust, smoothing it out evenly.
- Sprinkle the chopped pistachios over the top of the filling.
Chill and Serve
- Refrigerate the bars for at least 3 hours to set properly.
- Once set, slice into squares and serve with whipped cream, if desired.
- Garnish with additional blackberries and chopped pistachios for a beautiful presentation.
Notes
For best flavor, use fresh, ripe blackberries. Allow sufficient chilling time for proper texture.
