  • 2 cups fresh blackberries
  • 0.5 cup granulated sugar divided
For the Dumpling Batter
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 cup milk
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

Preparation
  1. In a medium-sized bowl, combine the fresh blackberries with half a cup of sugar. Gently toss to coat the blackberries and let them sit for about 10 minutes so they can release their natural juices.
  2. In another bowl, mix the flour, baking powder, and a pinch of salt.
  3. In a separate container, whisk together the remaining sugar, milk, melted butter, and vanilla extract.
  4. Gradually combine the wet and dry ingredients until just combined; be careful not to overmix.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Pour the blackberry mixture into a greased baking dish.
  3. Spoon the dumpling batter over the blackberries—it’s okay if it doesn’t cover them completely; it’ll spread during baking.
  4. Place the dish in the preheated oven and bake for about 30 minutes or until the dumplings are golden brown and a toothpick inserted into the dumplings comes out clean.
Serving
  1. Allow the dumplings to cool slightly before serving. For a delightful touch, add a scoop of vanilla ice cream or a dollop of whipped cream on top.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, pop them in the oven at 350°F (175°C) for about 10-15 minutes until warmed through.
