Ingredients
  

For the Salad
  • 2 pieces chicken breasts Boneless and skinless
  • 1 cup blackberries Fresh
  • 2 cups mixed salad greens Choose your favorite mix
  • 1/2 cup crumbled goat cheese For topping the salad
For the Balsamic Reduction
  • 1/2 cup balsamic vinegar For drizzling over the salad
  • 1 tablespoon olive oil For seasoning the chicken
For the Crispy Goat Cheese
  • 1/2 cup breadcrumbs For frying goat cheese
  • 1 piece egg For coating the goat cheese
  • Salt and pepper to taste Salt and pepper For seasoning the chicken

Method
 

Preparation
  1. Preheat a grill to medium-high heat.
  2. Season the chicken breasts with salt, pepper, and olive oil.
  3. Grill the chicken for 6-7 minutes on each side until fully cooked.
  4. Let the chicken rest for a few minutes before slicing.
Make the Balsamic Reduction
  1. In a small saucepan over medium heat, add balsamic vinegar and allow it to simmer for about 10 minutes until it thickens.
Prepare the Crispy Goat Cheese
  1. Slice goat cheese into rounds and dip each into egg mixture and then breadcrumbs.
  2. In a frying pan, heat oil and fry the goat cheese for 2-3 minutes per side until golden brown.
Combine the Salad
  1. In a large bowl, combine mixed salad greens, sliced grilled chicken, and blackberries.
  2. Crumble the fried goat cheese on top and drizzle with the balsamic reduction.
  3. Toss gently to mix and serve immediately.

Notes

Store leftovers in an airtight container for up to 2 days. Reheat chicken but add greens and dressing fresh to maintain crispness.
