Preparation
- Preheat a grill to medium-high heat.
- Season the chicken breasts with salt, pepper, and olive oil.
- Grill the chicken for 6-7 minutes on each side until fully cooked.
- Let the chicken rest for a few minutes before slicing.
Make the Balsamic Reduction
- In a small saucepan over medium heat, add balsamic vinegar and allow it to simmer for about 10 minutes until it thickens.
Prepare the Crispy Goat Cheese
- Slice goat cheese into rounds and dip each into egg mixture and then breadcrumbs.
- In a frying pan, heat oil and fry the goat cheese for 2-3 minutes per side until golden brown.
Combine the Salad
- In a large bowl, combine mixed salad greens, sliced grilled chicken, and blackberries.
- Crumble the fried goat cheese on top and drizzle with the balsamic reduction.
- Toss gently to mix and serve immediately.
Notes
Store leftovers in an airtight container for up to 2 days. Reheat chicken but add greens and dressing fresh to maintain crispness.
