  • 1 cup black sesame seeds Make sure the seeds are fresh for the best flavor.
  • 1 cup sugar
  • 1/4 cup water
  • 1 tablespoon butter
  • a pinch salt

Method
 

Preparation
  1. Begin by lining a baking sheet with parchment paper to prevent the brittle from sticking once it cools.
  2. In a dry skillet over medium heat, toast the black sesame seeds for 3-5 minutes, stirring frequently until they become aromatic. Be careful not to burn them!
  3. In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves, then stop stirring and allow it to boil.
  4. Once the mixture reaches a medium amber color (approximately 5-7 minutes of boiling), remove it from the heat immediately.
  5. Quickly add the toasted black sesame seeds, butter, and a pinch of salt into the sugar syrup, stirring thoroughly to combine.
  6. Pour the mixture onto your prepared baking sheet. Use a spatula to spread it out evenly and flatten it to your desired thickness.
  7. Allow the brittle to cool for at least 20-30 minutes. Once it’s set, break it into pieces and enjoy!

Notes

Store your Black Sesame Brittle in an airtight container at room temperature. It stays crisp for about 1-2 weeks, but it can also be frozen for up to three months.
