- Begin by lining a baking sheet with parchment paper to prevent the brittle from sticking once it cools.
- In a dry skillet over medium heat, toast the black sesame seeds for 3-5 minutes, stirring frequently until they become aromatic. Be careful not to burn them!
- In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves, then stop stirring and allow it to boil.
- Once the mixture reaches a medium amber color (approximately 5-7 minutes of boiling), remove it from the heat immediately.
- Quickly add the toasted black sesame seeds, butter, and a pinch of salt into the sugar syrup, stirring thoroughly to combine.
- Pour the mixture onto your prepared baking sheet. Use a spatula to spread it out evenly and flatten it to your desired thickness.
- Allow the brittle to cool for at least 20-30 minutes. Once it’s set, break it into pieces and enjoy!
Notes
Store your Black Sesame Brittle in an airtight container at room temperature. It stays crisp for about 1-2 weeks, but it can also be frozen for up to three months.
