Ingredients
  

For the Chicken
  • 2 pieces chicken breasts, sliced
  • 1 tablespoon soy sauce
  • 2 tablespoons black pepper more or less to taste
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon salt to taste
  • 1 tablespoon cornstarch optional for thickening
For the Sauté
  • 2 cups mushrooms, sliced shiitake or button mushrooms work well
  • 2 tablespoons olive oil

Method
 

Preparation
  1. Start by slicing the chicken breasts into thin strips and season them lightly with salt and black pepper.
  2. In a large pan, heat the olive oil over medium heat. Add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
Cooking
  1. Add the sliced chicken to the pan. Cook for about 5-7 minutes, or until the chicken is no longer pink and starts to brown.
  2. Toss in the sliced mushrooms and stir well, allowing them to soften for about 3-4 minutes.
  3. Stir in the soy sauce and, if desired, some cornstarch to thicken the sauce. Cook for an additional 2-3 minutes, ensuring everything is well-coated with the sauce.
  4. Remove from heat, garnish with more black pepper if desired, and serve hot.

Notes

For extra tenderness, marinate the chicken in soy sauce and a dash of black pepper for 15-30 minutes before cooking. To avoid steaming the chicken, cook in batches if necessary.
