Preparation
- Start by slicing the chicken breasts into thin strips and season them lightly with salt and black pepper.
- In a large pan, heat the olive oil over medium heat. Add the minced garlic and grated ginger. Sauté for about 1 minute until fragrant.
Cooking
- Add the sliced chicken to the pan. Cook for about 5-7 minutes, or until the chicken is no longer pink and starts to brown.
- Toss in the sliced mushrooms and stir well, allowing them to soften for about 3-4 minutes.
- Stir in the soy sauce and, if desired, some cornstarch to thicken the sauce. Cook for an additional 2-3 minutes, ensuring everything is well-coated with the sauce.
- Remove from heat, garnish with more black pepper if desired, and serve hot.
Notes
For extra tenderness, marinate the chicken in soy sauce and a dash of black pepper for 15-30 minutes before cooking. To avoid steaming the chicken, cook in batches if necessary.
