Preparation
- In a large mixing bowl, beat the heavy cream, sugar, and vanilla extract until stiff peaks form.
- Add the mascarpone cheese to the whipped cream and beat until smooth and creamy.
- In a shallow dish, mix the brewed coffee and cherry liqueur (if using). Quickly dip each ladyfinger into the coffee mixture.
- Arrange a layer of soaked ladyfingers in the bottom of a serving dish. Spread half of the mascarpone mixture over the ladyfingers and top with half of the halved cherries.
- Repeat the layers with the remaining ingredients, finishing with another layer of the mascarpone mixture on top. Cover and refrigerate for at least 4 hours or overnight.
Making the Cherry Sauce
- In a saucepan, combine the cherries, sugar, lemon juice, and water over medium heat. Cook until the cherries are soft, about 5-7 minutes.
- In a small bowl, mix cornstarch with a tablespoon of water to create a slurry. Stir the slurry into the cherry mixture and cook until thickened, about 2-3 minutes.
Assembly and Serving
- Before serving, garnish the chilled tiramisu with shaved chocolate and drizzle with the cherry sauce. Slice and serve chilled.
Notes
Use fresh cherries for the best flavor. Don't oversoak the ladyfingers; a quick dip is sufficient. Chill time is crucial for flavor development.
