Baking the Cupcakes
- Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large mixing bowl, sift together the all-purpose flour, sugar, cocoa powder, baking soda, and salt.
- In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
- Gradually integrate the wet ingredients with the dry ingredients, mixing until just combined—avoid over-mixing to keep the cupcakes light.
- Pour the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake in the preheated oven for approximately 20 minutes, or until a toothpick inserted comes out clean.
- Allow the cupcakes to cool completely before icing with black icing and decorating with candy eyes and additional colorful treats.
Notes
Substitute buttermilk with a mixture of regular milk and vinegar (one cup of milk with one tablespoon of vinegar) if you don’t have buttermilk on hand. Check your cupcakes a couple of minutes before the suggested baking time to prevent them from drying out. For a fun twist, try adding chocolate chips to the batter for extra chocolatey goodness. Store leftovers in an airtight container in the refrigerator for about 3-4 days. To reheat, microwave for about 10-15 seconds.
