  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups unsweetened cocoa powder
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 cup buttermilk
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract

Method
 

Baking the Cupcakes
  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large mixing bowl, sift together the all-purpose flour, sugar, cocoa powder, baking soda, and salt.
  3. In another bowl, mix the buttermilk, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually integrate the wet ingredients with the dry ingredients, mixing until just combined—avoid over-mixing to keep the cupcakes light.
  5. Pour the batter into the prepared muffin cups, filling each about two-thirds full.
  6. Bake in the preheated oven for approximately 20 minutes, or until a toothpick inserted comes out clean.
  7. Allow the cupcakes to cool completely before icing with black icing and decorating with candy eyes and additional colorful treats.

Notes

Substitute buttermilk with a mixture of regular milk and vinegar (one cup of milk with one tablespoon of vinegar) if you don’t have buttermilk on hand. Check your cupcakes a couple of minutes before the suggested baking time to prevent them from drying out. For a fun twist, try adding chocolate chips to the batter for extra chocolatey goodness. Store leftovers in an airtight container in the refrigerator for about 3-4 days. To reheat, microwave for about 10-15 seconds.
