Ingredients

Main Ingredients
  • 1 can black beans, rinsed and drained 15 oz
  • 2 large eggs
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup honey or maple syrup for sweetness
  • 1/4 cup peanut butter or nut butter of choice
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup dark chocolate chips optional

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8-inch square baking pan or line it with parchment paper.
  2. In a food processor, combine the black beans, eggs, cocoa powder, honey (or maple syrup), peanut butter, vanilla extract, baking powder, and salt. Blend until smooth, scraping down the sides as necessary.
  3. If using chocolate chips, fold them into the brownie batter.
  4. Transfer the brownie mixture into the prepared baking pan, spreading it evenly.
  5. Bake in the preheated oven for 20-25 minutes, or until a toothpick comes out clean from the center.
  6. Allow brownies to cool in the pan for about 10 minutes before cutting them into squares. Enjoy them warm or cool!

Notes

To ensure perfect brownies, avoid overmixing. You can substitute peanut butter with almond butter or use agave syrup for a vegan option. Store leftovers in an airtight container for up to a week in the refrigerator.
