Ingredients
  

For the Casserole
  • 1 pound ground beef
  • 1 large onion, chopped
  • 1 large bell pepper, chopped
  • 2 cups frozen mixed vegetables (such as corn, peas, and carrots)
  • 1 cup shredded cheddar cheese
For the Biscuit Topping
  • 1.5 cups milk
  • 0.5 cup Bisquick mix
  • 3 large eggs
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet over medium heat, brown the ground beef, adding the chopped onion and bell pepper. Sauté until the beef is no longer pink and the vegetables are tender. Drain excess fat.
  3. Stir in the frozen mixed vegetables, seasoning with salt and pepper to taste. Allow the mixture to heat through for about 3-5 minutes.
  4. In a separate bowl, whisk together the milk, Bisquick mix, and eggs until smooth.
Assembly and Baking
  1. Spread the beef and vegetable mixture evenly in a greased baking dish.
  2. Pour the Bisquick mixture on top, then sprinkle shredded cheddar cheese over everything.
  3. Bake in the preheated oven for 25-30 minutes, or until set and the top is lightly golden brown.
  4. Remove from the oven, let it cool slightly, and serve.

Notes

Feel free to switch up vegetables based on your preference. For a browned top, broil for a minute or two before serving. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 2 months.
