Biscoff Nutella Cups

Base Ingredients
  • 1 cup Biscoff cookies, crushed Finely crushed for the cup base.
  • ½ cup Nutella Use generously for filling.
  • ½ cup Chocolate (dark or milk, optional for coating), melted Choose your preferred chocolate for coating.
  • a pinch Sea salt (optional for topping) Sprinkle on top for extra flavor.

Method
 

Preparation
  1. Start by crushing the Biscoff cookies into fine crumbs using a food processor or a rolling pin in a ziplock bag.
  2. In a bowl, combine the crushed cookies with melted butter (or a Halal alternative) until the mixture resembles wet sand.
  3. Line a muffin tin with cupcake liners and spoon the Biscoff mixture into each liner, pressing down firmly to form a base.
  4. Spoon Nutella into each cookie cup, filling it to the top.
  5. Place the muffin tin in the fridge for about 15-20 minutes to allow the Nutella filling to set.
  6. If using chocolate, melt it over a double boiler or in the microwave. Dip the top of the chilled cookie cups into the melted chocolate, and sprinkle with sea salt if desired.
  7. Return the cups to the fridge for a few more minutes to allow the chocolate to harden.
  8. Once set, carefully peel away the cupcake liners, and your Biscoff Nutella Cups are ready to serve.

Notes

Store these in an airtight container in the refrigerator for up to a week, or freeze for up to a month. Allow to come to room temperature before serving; best enjoyed chilled.
