Preparation
- Start by crushing the Biscoff cookies into fine crumbs using a food processor or a rolling pin in a ziplock bag.
- In a bowl, combine the crushed cookies with melted butter (or a Halal alternative) until the mixture resembles wet sand.
- Line a muffin tin with cupcake liners and spoon the Biscoff mixture into each liner, pressing down firmly to form a base.
- Spoon Nutella into each cookie cup, filling it to the top.
- Place the muffin tin in the fridge for about 15-20 minutes to allow the Nutella filling to set.
- If using chocolate, melt it over a double boiler or in the microwave. Dip the top of the chilled cookie cups into the melted chocolate, and sprinkle with sea salt if desired.
- Return the cups to the fridge for a few more minutes to allow the chocolate to harden.
- Once set, carefully peel away the cupcake liners, and your Biscoff Nutella Cups are ready to serve.
Notes
Store these in an airtight container in the refrigerator for up to a week, or freeze for up to a month. Allow to come to room temperature before serving; best enjoyed chilled.
