Ingredients
  

For the Crust
  • Biscoff cookies to taste Biscoff cookies (for crust) Crushed into fine crumbs
For the Filling
  • 8 oz cream cheese, softened Ensure fully softened to prevent lumps
  • 1 cup Biscoff cookie spread Can substitute with a chocolate cookie spread
  • 1/2 cup powdered sugar Gradually mixed in
  • 1 cup whipped cream Fold in gently for a light texture

Preparation
  1. Prepare the crust by crushing the Biscoff cookies into fine crumbs using a food processor or a rolling pin.
  2. In a medium bowl, soften the cream cheese with a hand mixer until smooth. Gradually mix in the powdered sugar and then blend in the Biscoff cookie spread until creamy.
  3. Gently fold in the whipped cream to keep the mixture light and fluffy.
  4. Line a baking dish with parchment paper. Press the crushed Biscoff cookie mix into the bottom to form a crust.
  5. Spread the Biscoff cheesecake filling over the crust evenly.
  6. Chill in the refrigerator for at least 4 hours or overnight for best results.
  7. Once chilled, lift the cheesecake bars out of the baking dish, slice into squares or rectangles, and serve.

Notes

Top with a drizzle of Biscoff sauce or crushed cookies for added presentation. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months.
