Preparation
- Prepare the crust by crushing the Biscoff cookies into fine crumbs using a food processor or a rolling pin.
- In a medium bowl, soften the cream cheese with a hand mixer until smooth. Gradually mix in the powdered sugar and then blend in the Biscoff cookie spread until creamy.
- Gently fold in the whipped cream to keep the mixture light and fluffy.
- Line a baking dish with parchment paper. Press the crushed Biscoff cookie mix into the bottom to form a crust.
- Spread the Biscoff cheesecake filling over the crust evenly.
- Chill in the refrigerator for at least 4 hours or overnight for best results.
- Once chilled, lift the cheesecake bars out of the baking dish, slice into squares or rectangles, and serve.
Notes
Top with a drizzle of Biscoff sauce or crushed cookies for added presentation. Store leftovers in an airtight container in the refrigerator for up to a week or freeze for up to three months.
