Preparation
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the softened cream cheese, 1/4 cup sugar, and vanilla extract until smooth. Set aside.
- In a separate bowl, whisk together all-purpose flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- In another bowl, whisk together pumpkin puree, sugar, vegetable oil, and eggs until well combined.
- Gradually add the dry ingredient mixture to the pumpkin mixture, stirring gently until just combined. Be careful not to overmix.
Baking
- Line a muffin tin with paper liners and fill each cup halfway with pumpkin batter.
- Place about 1 tablespoon of the cream cheese filling in the center of each muffin and top with additional batter until nearly full.
- Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted in the muffin comes out clean.
- Allow the muffins to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely.
Notes
To keep muffins moist, do not overbake. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
