Crust
  • 1 pie crust 1 pie crust (store-bought or homemade) Use a graham cracker crust for extra flavor if desired.
Filling
  • 1 cup 1 cup corn syrup
  • 1 cup 1 cup brown sugar
  • 4 large 4 large eggs Can be substituted with flax eggs for a vegan option.
  • 2 tablespoons 2 tablespoons unsalted butter, melted Use plant-based butter for a vegan option.
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1/4 teaspoon 1/4 teaspoon salt
  • 1 1/2 cups 1 1/2 cups pecan halves Consider toasting pecans briefly for enhanced flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). If using homemade crust, roll it out and place it into a pie dish. For store-bought, just fit it into your dish.
Mixing
  1. In a large mixing bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, vanilla extract, and salt until smooth and slightly frothy.
  2. Fold the pecan halves into the mixture, distributing them evenly.
Baking
  1. Pour the filling into the prepared crust, spreading the pecans evenly. Bake for about 60 minutes or until set and golden brown. The center should jiggle slightly when done.
Cooling
  1. Allow the pie to cool for at least 2 hours before slicing.

Notes

Store in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat individual slices in the microwave or warm the whole pie in a 350°F oven.
