  • 2 medium medium acorn squash
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon ground cinnamon optional
  • 2 tablespoons maple syrup or honey for sweetness

  • chopped pecans or walnuts, cranberries, and fresh herbs

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the acorn squash in half lengthwise. Remove the seeds with a spoon and scoop out any stringy bits.
  3. Brush the cut sides of each squash half with olive oil. Sprinkle salt, black pepper, and ground cinnamon over the flesh.
  4. Drizzle 1 tablespoon of maple syrup or honey on each half.
  5. Place the squash cut side down on a lined baking sheet.
Cooking
  1. Bake in the preheated oven for about 35 minutes or until the squash is tender and caramelized.
  2. Once done, flip the halves over and add any desired toppings like nuts or cranberries.

Notes

Store leftovers in the refrigerator for up to a week in an airtight container or freeze tightly wrapped for about 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
