Preparation
- Preheat your oven to 400°F (200°C).
- Cut the acorn squash in half lengthwise. Remove the seeds with a spoon and scoop out any stringy bits.
- Brush the cut sides of each squash half with olive oil. Sprinkle salt, black pepper, and ground cinnamon over the flesh.
- Drizzle 1 tablespoon of maple syrup or honey on each half.
- Place the squash cut side down on a lined baking sheet.
Cooking
- Bake in the preheated oven for about 35 minutes or until the squash is tender and caramelized.
- Once done, flip the halves over and add any desired toppings like nuts or cranberries.
Notes
Store leftovers in the refrigerator for up to a week in an airtight container or freeze tightly wrapped for about 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
