  • 1 can 15 oz chickpeas, drained and rinsed
  • 1/4 cup tahini Choose a good quality for best flavor.
  • 2 tablespoons olive oil Plus more for garnish.
  • 2 tablespoons lemon juice Adjust to taste.
  • 1 clove garlic, minced
  • 1/2 teaspoon ground cumin
  • to taste Salt
  • as needed Water For desired consistency.
  • Paprika and olive oil for garnish (optional)

Method
 

Preparation
  1. Drain and rinse the can of chickpeas under cold water to eliminate any tin flavor.
  2. In a food processor, combine the chickpeas, tahini, olive oil, lemon juice, minced garlic, ground cumin, and a pinch of salt.
  3. Pulse the ingredients for about 30 seconds to incorporate the flavors.
  4. Slowly drizzle in water, a tablespoon at a time, while blending until you achieve your desired creamy consistency.
  5. Taste the hummus and adjust the seasoning as necessary; add more salt or lemon juice if needed.
  6. Transfer the hummus to a serving bowl and garnish with olive oil and paprika or fresh herbs if desired.
  7. Serve with pita bread or vegetable sticks.

Notes

For optimal flavor, refrigerate the hummus for at least 30 minutes before serving. Store in an airtight container in the refrigerator for 5-7 days or freeze for up to three months. Thaw in the refrigerator and stir before serving; add water or olive oil to regain consistency if needed.
