Ingredients

Batter Ingredients
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika optional, for a hint of smokiness
  • 1 cup cold sparkling water or beer, for extra flavor
Fish
  • Fresh fish fillets (cod, halibut, or your preferred variety)
Oil for Frying
  • Oil enough to fully submerge the fish fillets

Method

Preparation
  1. Rinse your fish fillets under cold water and pat them dry with a paper towel.
  2. In a mixing bowl, combine flour, baking powder, salt, black pepper, and paprika. Whisk until well combined.
  3. Gradually pour in the cold sparkling water (or beer) while whisking until a smooth batter forms.
  4. Heat enough oil in a deep frying pan or pot to fully submerge the fish fillets, aiming for 350°F (175°C).
Cooking
  1. Dip each fish fillet into the batter, allowing excess to drip off.
  2. Gently lower the battered fillets into the hot oil and fry until golden brown and crispy, about 3-4 minutes per side.
  3. Remove fillets from the oil and let them drain on a paper towel-lined plate.
Serving
  1. Serve hot with your favorite condiments.

Notes

For best results, ensure the oil is hot enough, mix the batter gently without over-mixing, and refrigerate your ingredients before use. Leftovers can be stored in the fridge or frozen.
