Preparation
  1. Start by rinsing your whole chicken (or chicken pieces) under cold water. Pat it dry with a paper towel and place it in a large pot.
  2. Pour 8 cups of cold water over the chicken. This will serve as the broth base for your soup.
  3. Toss in the diced onion, sliced carrots, sliced celery, minced garlic, and bay leaf.
Cooking
  1. Turn the heat to medium-high, allowing the mixture to come to a gentle boil. As it heats, some foam may rise to the top; skim this off with a spoon.
  2. Reduce the heat to low and cover the pot, letting it simmer for about 45 minutes to an hour.
  3. Once the chicken is thoroughly cooked, carefully remove it from the pot. Let it cool before shredding the meat, discarding the skin and bones.
  4. Return the shredded chicken to the pot and season your soup with salt and pepper to taste.
  5. Garnish the soup hot with fresh herbs like parsley or thyme and serve with crusty bread.

Notes

Leftover chicken can be used in the recipe. Storing tips: Refrigerate leftovers for up to 3 days or freeze for up to 3 months. Thaw in the refrigerator and reheat on the stovetop.
