Preparation of Dough
- In a medium saucepan, combine the water, butter, salt, and sugar. Bring this mixture to a boil over medium heat.
- Once boiling, remove from heat and quickly stir in the flour until a dough forms. Transfer the dough to a mixing bowl.
- Allow the dough to cool slightly, then beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until smooth.
Cooking
- In a deep skillet, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C).
- Spoon the dough into a piping bag fitted with a star-shaped nozzle. Pipe small bite-sized pieces directly into the hot oil, cutting them with scissors.
- Fry until they are golden brown, about 2-3 minutes. Avoid overcrowding the pan—fry in batches if necessary.
- Once cooked, remove the churro bites using a slotted spoon and drain on a paper towel. While they’re still warm, toss them in the cinnamon-sugar mixture.
- Serve warm and enjoy the delightful crunch!

For perfect churros, ensure the dough is smooth and well-mixed. Monitor the oil temperature closely. Store leftover churro bites in an airtight container at room temperature for up to 2 days or freeze for a month.
