  • 2 pounds of beef chuck trimmed and cut into 1-inch pieces

  • 2 medium potatoes peeled and cubed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 tablespoons tomato paste
  • 2 tablespoons olive oil
  • 2 teaspoons dried thyme
