  • 1.5 teaspoons baking powder
  • 1.5 teaspoons baking soda
  • 1 teaspoon salt
Wet Ingredients
  • 2 large eggs
  • 1 cup whole milk
  • 0.5 cups vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water Makes the batter thin, which is expected.

Preparation
  1. Preheat the oven to 350°F (175°C) and line your cupcake pan with paper liners.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt. Whisk until blended.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients. Beat on medium speed for about 2 minutes until smooth.
  4. Stir in the boiling water until the batter is well mixed.
Baking
  1. Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
  2. Bake for 18-20 minutes until a toothpick inserted into the center comes out clean.
  3. Allow cupcakes to cool in the pan for about 5 minutes, then transfer to a wire rack.
  4. Once completely cool, frost with your favorite icing.

Notes

For optimal texture, do not skip the boiling water! You can customize cupcakes with toppings like chocolate ganache or buttercream. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 2 months.
