Wet Ingredients
  • 2 large eggs Use room temperature for better mixing.
  • 1 cup whole milk Can substitute with almond milk.
  • 1/2 cup vegetable oil Coconut oil can be used for a different flavor.
  • 2 teaspoons vanilla extract For added flavor.
  • 1 cup boiling water Thin batter will result in a moist cake.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two round 9-inch cake pans or line with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt until well combined.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Use an electric mixer on medium speed for about 2 minutes until combined.
  4. Carefully stir in the boiling water. Don’t worry; the batter will be thin!
Baking
  1. Pour the batter evenly into the prepared pans. Bake for 30 to 35 minutes or until a toothpick inserted in the center comes out clean.
  2. Once baked, remove from the oven and allow the cakes to cool in the pans for 10 minutes. Then, turn them out onto wire racks to cool completely.
Frosting and Serving
  1. Once cooled, frost with your favorite frosting and enjoy!

Store leftover cake in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months wrapped tightly to maintain freshness.
