  • 4-5 cups diced cooked chicken breast Use rotisserie chicken for convenience.
  • 2 cups seedless grapes, halved
  • 1 cup chopped walnuts Can substitute with almonds or pecans.
  • 3 stalks celery, finely diced
  • 4 scallions thinly sliced
  • 3 tbsp fresh dill, chopped
  • 3 tbsp fresh parsley, chopped
For the Dressing
  • 1 cup mayonnaise
  • 1 whole lemon, juice
  • 1 tbsp lemon zest
  • 2 tbsp Dijon mustard
  • 1 tsp salt
  • 1/2 tsp pepper

Preparation
  1. In a large bowl, combine the diced chicken, halved grapes, chopped walnuts, diced celery, thinly sliced scallions, fresh dill, and parsley. Toss gently to mix everything evenly.
  2. In a separate bowl, whisk together the mayonnaise, lemon juice, lemon zest, Dijon mustard, salt, and pepper until smooth and creamy.
  3. Pour the dressing over the chicken mixture, and toss well until everything is coated.

Notes
