Ingredients

Main Ingredients
  • 1 medium head cabbage, chopped
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 2 large carrots, sliced
  • 1 large bell pepper, diced (any color)
  • 2 medium tomatoes, chopped
  • 6 cups vegetable broth (or water)
  • 1 tablespoon olive oil
  • 1 teaspoon cumin (optional)
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or cilantro) for garnish

Method

Preparation
  1. Start by washing and chopping your cabbage, onions, carrots, bell peppers, and tomatoes.
  2. In a large pot, heat the olive oil over medium heat. Add onions and garlic; cook until soft and fragrant, about 3-4 minutes.
  3. Stir in the carrots and bell peppers. Sauté them for another 5 minutes until they begin to soften.
  4. Toss in the chopped cabbage and mix well, allowing it to wilt slightly.
  5. Add the vegetable broth and tomatoes to the pot. Stir in cumin (if using) along with salt and pepper. Bring the mixture to a gentle boil.
  6. Reduce the heat and let your soup simmer for 20-25 minutes, allowing the flavors to meld perfectly together.
  7. Once cooked, ladle the soup into bowls, garnish with fresh herbs, and enjoy your hearty meal!

Notes

For variations, feel free to substitute with spinach, kale, or zucchini. Avoid overcooking the vegetables to maintain their crunch.
