Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- On a floured surface, roll out the puff pastry sheets to about 1/8-inch thickness. Use a sharp knife to cut the pastry into squares or rectangles, about 4x4 inches each.
- Place a dollop of vanilla custard in the center of each pastry square, leaving about an inch around the edges. Top the custard with a mix of fresh berries.
- Fold the corners of each pastry over the filling to create a pocket. Pinch the edges firmly to seal them.
- Brush the tops of the pastries with the beaten egg to give them a beautiful golden color when baked.
- Place the pastries on the prepared baking sheet and bake for 15-20 minutes or until they are puffed and golden brown.
- Allow the pastries to cool slightly, then dust with powdered sugar just before serving.
Notes
Consider switching up the fruits with sliced peaches or nectarines, or try coconut cream instead of custard for a unique twist. Keep your puff pastry cold until ready to use for best results. Avoid over-filling to prevent leaking while baking.
