  • 1 cup fresh berries (blueberries, raspberries, or strawberries) You can mix and match your choice of berries.
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar Adjust sweetness to your taste.
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
For the Crumb Topping
  • 0.5 cup brown sugar
  • 0.5 cup rolled oats
  • 1 teaspoon cinnamon
  • 0.5 cup unsalted butter, melted Use melted butter to create a crumbly texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the eggs one at a time, then add the vanilla extract.
  4. In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add the dry mixture to the creamed mixture, mixing just until incorporated.
  6. Gently fold in your choice of fresh berries.
  7. Pour the batter into the prepared cake pan.
Crumb Topping
  1. In a separate bowl, mix the brown sugar, rolled oats, flour, cinnamon, and melted butter until crumbly.
  2. Sprinkle the crumb mixture evenly over the batter in the pan.
Baking
  1. Place the cake in the preheated oven and bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
  2. Let the cake cool slightly before serving.

Notes

This cake is best enjoyed warm. It pairs well with vanilla ice cream or whipped cream. You can also serve it with a berry compote or coffee.
