  • 1 pound ground beef (Halal)
  • 2 medium zucchinis, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup marinara sauce (or tomato sauce)
  • 1 cup shredded cheese (your choice: mozzarella, cheddar, etc.)
  • 1 teaspoon dried Italian herbs (oregano, basil)
  • Salt and pepper to taste
  • Olive oil for cooking
  • Optional: Breadcrumbs for topping

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Heat a tablespoon of olive oil in a skillet over medium heat. Add the chopped onions and minced garlic. Sauté until the onions become translucent, about 3-4 minutes.
  3. Add the ground beef to the skillet, season with salt, pepper, and Italian herbs. Brown the meat for about 6-8 minutes or until fully cooked.
  4. In a baking dish, layer half of the zucchini slices, followed by the beef mixture and half of the marinara sauce. Then, repeat with another layer of zucchini, the remaining marinara sauce, and top with shredded cheese.
Baking
  1. Cover the casserole with foil and bake in the preheated oven for 25 minutes.
  2. Remove the foil and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
Serving
  1. Allow the casserole to cool for a few minutes before slicing and serving.

Notes

Zucchini can be substituted with eggplant or yellow squash. For best results, slice zucchini about 1/4 inch thick. Salting zucchini before baking can help avoid excess moisture.
