Preparation
- Preheat your oven to 400°F (200°C). If you have a baking sheet, line it with aluminum foil for easy cleanup.
- Slice the bell peppers, onions, and zucchini. Cut the beef sausages into bite-sized pieces for even cooking.
Mix and Assemble
- In a large bowl, combine the sliced veggies and beef sausage pieces. Drizzle with olive oil, then season with salt, pepper, and garlic powder. Toss everything together until well coated.
- Lay out large pieces of aluminum foil. Divide the sausage and veggie mixture among the sheets, folding the foil to create tightly sealed packets.
Cooking
- Place the foil packs on a baking sheet and bake in the preheated oven for 20-25 minutes. The sausages should be cooked through, and the veggies will be perfectly tender.
Serving
- Carefully unwrap the foil packs (watch out for steam!) and serve warm, topped with your choice of extras like cheese or fresh herbs.
Notes
Feel free to swap out veggies based on what you have at home—broccoli, carrots, or even sweet potatoes work wonderfully. Ensure to seal the foil packs tightly to retain steam for even cooking. Leftovers can be stored in an airtight container for up to 3 days or frozen for up to 3 months. When reheating, place them back in the oven at 350°F (175°C) until warmed through.
