Preparation
- Gather all your ingredients—shredded BBQ chicken, cheese, sliced red onion, and chopped cilantro.
- Place a frying pan over medium heat and drizzle a little olive oil to keep everything from sticking.
Cooking
- Lay one tortilla flat in the pan. On one half, add a generous portion of shredded BBQ chicken, a sprinkle of cheese, and a few slices of red onion. Fold the tortilla over the filling to create a semi-circle.
- Cook for about 3-4 minutes or until the bottom is golden and crispy. Carefully flip the quesadilla to the other side using a spatula, and cook for an additional 3-4 minutes, until the cheese has melted.
- Once crispy and heated through, remove the quesadilla from the pan and let it cool for a moment. Cut into wedges, and garnish with fresh cilantro.
- Serve warm with your favorite dipping sauces or sides.
Notes
To ensure your BBQ Chicken Quesadilla turns out perfect every time, use cooked chicken mixed with your favorite BBQ sauce if you can’t find shredded BBQ chicken. Keep an eye on the tortillas to avoid overcooking, and don't overfill them to ensure even cooking.
