  • 1 cup almond flour Ensure almond flour is finely ground for best results.
  • 1 3/4 cups powdered sugar Sifted to remove lumps.

  • 3 large egg whites Use aged egg whites for better volume.
  • 1/4 cup granulated sugar To stabilize the egg whites.
  • 1/2 teaspoon vanilla extract Adds flavor.
  • Food coloring (optional) Use sparingly for color.
Filling
  • Buttercream or ganache for filling Your choice of filling.

Method
 

Preparation
  1. Line your baking sheets with parchment paper or silicone mats to prevent sticking.
  2. In a mixing bowl, sift the almond flour and powdered sugar together, repeating until there are no lumps.
Mixing
  1. In a separate bowl, add egg whites and granulated sugar. Beat with an electric mixer until soft peaks form (about 2-3 minutes on medium speed).
  2. Fold in the vanilla extract and food coloring carefully.
  3. Gradually add the almond flour and powdered sugar mixture to the whipped egg whites, folding gently until the mixture flows like lava.
Piping and Baking
  1. Transfer the batter to a piping bag fitted with a round tip and pipe small rounds (1 to 1.5 inches in diameter) on the prepared baking sheets.
  2. Let the piped macarons sit at room temperature for 30 minutes to form a dry shell.
  3. Preheat the oven to 300°F (150°C) and bake the macarons for 15-17 minutes until slightly risen and forming a 'foot'.
  4. Cool completely before removing from baking sheets.
Filling
  1. Pair the shells with your favorite buttercream or ganache filling and gently sandwich them together.

Notes

Store macarons in an airtight container in the fridge for up to a week or freeze for longer shelf life. Let them sit at room temperature for about 15 minutes before serving to regain perfect texture.
