  • 1 lb ground beef or turkey Choose your preferred meat.
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 cups barbecue sauce Your favorite brand or homemade.
  • 2 cups cooked pasta (macaroni or penne) Prepare pasta according to package instructions.
  • 1 cup shredded cheese (cheddar or mozzarella) Use your choice of cheese.
  • Salt and pepper to taste
  • Optional: chopped green onions for garnish For added flavor and color.

Preparation
  1. Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. In a large skillet over medium heat, brown the ground beef or turkey, breaking it apart with a spatula. Once browned, drain any excess fat.
  3. Add the diced onion and bell pepper to the skillet with the meat. Cook until softened, about 3-5 minutes.
  4. Stir in the barbecue sauce and cooked pasta until everything is well combined. Season with salt and pepper to taste.
  5. Pour the mixture into a greased casserole dish and spread evenly. Top with shredded cheese to create a bubbly, golden crust.
  6. Place the dish in the oven and bake for 20-25 minutes, or until the cheese is melted and slightly golden.
  7. Remove the casserole from the oven and let cool for a few minutes. If desired, garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze for longer storage. Reheat in the oven at 350°F or microwave individual servings until hot.
