  • 2 pieces ripe bananas Make sure your bananas are ripe for maximum sweetness.
  • 1 cup rolled oats Can substitute with quick oats for a softer texture.
  • 1/4 cup honey or maple syrup Use maple syrup for a vegan option.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 pinch salt
  • to taste optional chocolate chips, nuts, or dried fruit Feel free to customize with your favorite add-ins.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add rolled oats, honey or maple syrup, vanilla extract, baking powder, and a pinch of salt into the bowl. Stir until well-combined, and fold in optional ingredients if using.
  4. Line an 8x8 inch baking dish with parchment paper.
  5. Pour the mixture into the prepared dish, spreading it evenly with a spatula.
Baking
  1. Bake in the preheated oven for 20-25 minutes until golden brown on top. A toothpick inserted in the center should come out clean.
Cooling and Slicing
  1. Let the bars cool in the pan for about 10 minutes. Lift them out using the parchment paper and cut into squares.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for up to three months. Microwave for 10-15 seconds to warm before serving.
