Banana Muffins with Nutella Swirl

Ingredients
  

For the Muffins
  • 3 pieces ripe bananas, mashed Opt for very ripe bananas for best sweetness and moisture.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • a pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/3 cup Nutella (or any chocolate-hazelnut spread) Can substitute with any preferred chocolate spread.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth.
  3. Stir in the melted butter to the mashed bananas.
  4. Add baking soda and a pinch of salt. Mix well.
  5. Add the sugar, beaten egg, and vanilla extract. Stir until combined.
  6. Gradually add the flour into the mixture and stir until just blended. Avoid overmixing!
  7. Line a muffin tin with muffin liners or grease it with cooking spray.
  8. Fill each muffin cup about 1/2 full with batter.
  9. Spoon a pinch of Nutella into each cup, then use a knife or skewer to swirl it into the batter.
Baking
  1. Bake for around 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Serving
  1. Remove from the oven and let cool. Enjoy these decadent muffins while they’re warm!

Notes

Store muffins in an airtight container at room temperature for up to 2 days or in the fridge for about a week. For longer storage, freeze individually wrapped for up to 3 months.
