Ingredients
  

Wet Ingredients
  • 3 pieces ripe bananas, mashed The riper, the better!
  • 1/3 cup melted butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 3/4 cup sugar Adjust to taste
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 cup all-purpose flour
Optional Add-ins
  • 1/2 cup chopped walnuts or chocolate chips Add for extra flavor and texture

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with paper liners or lightly grease it with oil or cooking spray.
  3. In a large mixing bowl, combine the mashed bananas with the melted butter until smooth.
  4. Stir in the sugar, beaten egg, and vanilla extract until fully combined.
  5. Sprinkle the baking soda and salt over the banana mixture and mix in the all-purpose flour until just combined. Fold in nuts or chocolate chips if using.
  6. Spoon the batter into the prepared muffin cups, filling each about 2/3 full.
Baking
  1. Place the muffin tin in the preheated oven and bake for 20-25 minutes until the tops are golden brown and a toothpick inserted into the center comes out clean.
Cooling
  1. Allow the muffins to cool for a few minutes in the pan before transferring them to a wire rack. Enjoy warm or at room temperature!

Notes

Use overripe bananas for sweeter muffins. Don’t overmix to avoid dense muffins. Experiment with flavors by swapping sugar for honey or adding spices.
