Ingredients
  

Main Ingredients
  • 3 pieces ripe bananas Ensure they are nicely ripe for better sweetness.
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 tbsp sugar Adjust to taste.
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup milk (or milk alternative)
  • as needed for frying oil Use for frying until golden brown.

Method
 

Preparation
  1. Peel the ripe bananas and mash them in a mixing bowl until smooth.
  2. In another bowl, mix together the flour, baking powder, sugar, and salt until there are no lumps.
  3. Gradually add the dry ingredients to the mashed bananas. Pour in the milk and vanilla extract, stirring gently until fully combined. Lumps are okay!
  4. In a frying pan, heat about 1/2 inch of oil over medium heat.
  5. Using a spoon or small ice cream scoop, drop dollops of batter into the hot oil and fry until golden brown, about 2-3 minutes on each side.
  6. Once golden brown, remove the fritters from the oil and place them on a paper towel to drain excess oil.
  7. Serve warm, topped with syrup, powdered sugar, or ice cream.

Notes

For the best flavor, banana fritters should be enjoyed fresh. Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for 10 minutes.
