Ingredients
  

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup mashed ripe bananas about 1 large banana
  • 1 cup old-fashioned rolled oats
  • 1/2 cup chopped walnuts optional
  • 1/2 cup chocolate chips optional

Instructions
 

  • Preheat the Oven: Start by preheating your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. This will ensure your cookies rise perfectly!
  • Cream the Butters and Sugars: In a separate bowl, beat together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy.
  • Beat in Egg and Banana: Add the egg and vanilla extract to the butter mixture, followed by the mashed bananas. Mix until everything is well combined.
  • Combine the Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined.
  • Add Oats and Mix-ins: Fold in the rolled oats, and if you’re feeling adventurous, add some walnuts or chocolate chips.
  • Scoop and Bake: Using a spoon or cookie scoop, drop spoonfuls of dough onto the prepared baking sheet, leaving enough space between each cookie.
