  • 1 head cabbage Cut into thick rounds.
  • 1/4 cup balsamic vinegar For marinade.
  • 2 tablespoons honey For sweetness.
  • 2 tablespoons olive oil For coating.
  • to taste pinch Salt For seasoning.
  • to taste pinch Pepper For seasoning.

Method

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the head of cabbage into thick rounds, about 1-inch thick, keeping some of the core intact.
  3. In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper until well combined.
  4. Place the cabbage slices on a baking sheet lined with parchment paper. Brush both sides generously with the balsamic mixture.
Roasting
  1. Roast in the oven for 25-30 minutes, flipping once halfway through, until the edges are golden brown and crispy.
Serving
  1. Remove from the oven, drizzle any remaining marinade over the top, and serve warm.

Notes

If honey isn’t available, maple syrup is a delightful alternative. Avoid cutting the cabbage too thin to prevent it from falling apart. Store leftovers in an airtight container for up to 3 days or freeze for longer storage. Reheat in a 350°F oven for about 10-15 minutes.
