Preparation
- Preheat your oven to 400°F (200°C).
- Slice the head of cabbage into thick rounds, about 1-inch thick, keeping some of the core intact.
- In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper until well combined.
- Place the cabbage slices on a baking sheet lined with parchment paper. Brush both sides generously with the balsamic mixture.
Roasting
- Roast in the oven for 25-30 minutes, flipping once halfway through, until the edges are golden brown and crispy.
Serving
- Remove from the oven, drizzle any remaining marinade over the top, and serve warm.
Notes
If honey isn’t available, maple syrup is a delightful alternative. Avoid cutting the cabbage too thin to prevent it from falling apart. Store leftovers in an airtight container for up to 3 days or freeze for longer storage. Reheat in a 350°F oven for about 10-15 minutes.
