Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts on a cutting board and season both sides with salt and pepper to taste.
Cooking
  1. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear them for 3-4 minutes on each side until golden brown.
  2. Pour the balsamic vinegar over the chicken breasts and let it simmer for another minute to infuse the flavors.
  3. Sprinkle the shredded mozzarella cheese evenly over the chicken breasts.
  4. Transfer the skillet to the preheated oven and bake for 15-20 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
  5. Garnish with fresh basil leaves, slice, and serve immediately.

For substitutions, try swapping mozzarella for provolone or goat cheese. Ensure the chicken reaches an internal temperature of at least 165°F (75°C) for safe consumption. Store leftover chicken in an airtight container for 3-4 days in the refrigerator or freeze for up to 3 months.
