Preparation
- Preheat the oven to 400°F (200°C) and line a muffin tin with paper liners or grease it lightly.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, whisk the eggs, then add the milk, melted butter, and vanilla extract. Mix until smooth.
- Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix – a few lumps are perfectly fine!
- Gently fold in the chocolate chips until evenly distributed throughout the batter.
- Spoon the batter into the prepared muffin tin, filling each muffin cup about 2/3 full.
- Bake for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. Enjoy warm or at room temperature!
Notes
For variations, consider adding shredded coconut, nuts, or a drizzle of honey. Store in an airtight container for 2-3 days at room temperature, or refrigerate for up to a week.
