Preparation
- Preheat your oven to 375°F (190°C).
- Thinly slice the zucchini lengthwise using a mandoline or sharp knife to create long strips.
- In a medium bowl, mix together ricotta cheese, mozzarella cheese, Parmesan cheese, and the egg. Season with salt and pepper to taste.
- Spread a layer of marinara sauce on the bottom of a baking dish.
Assembly
- Take a zucchini strip, place a spoonful of the cheese mixture on one end, and roll it up tightly. Repeat for all strips and place them seam-side down in the baking dish.
- Pour remaining marinara sauce over the zucchini rolls and sprinkle additional mozzarella cheese on top if desired. Drizzle with olive oil.
Baking
- Place the dish in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and golden.
- Garnish with fresh basil before serving.
