Ingredients
  

For the zucchini rolls
  • 2 large large zucchini thinly sliced lengthwise
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup marinara sauce for layering
  • Salt and pepper to taste
  • Olive oil for drizzling
  • Fresh basil for garnish

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Thinly slice the zucchini lengthwise using a mandoline or sharp knife to create long strips.
  3. In a medium bowl, mix together ricotta cheese, mozzarella cheese, Parmesan cheese, and the egg. Season with salt and pepper to taste.
  4. Spread a layer of marinara sauce on the bottom of a baking dish.
Assembly
  1. Take a zucchini strip, place a spoonful of the cheese mixture on one end, and roll it up tightly. Repeat for all strips and place them seam-side down in the baking dish.
  2. Pour remaining marinara sauce over the zucchini rolls and sprinkle additional mozzarella cheese on top if desired. Drizzle with olive oil.
Baking
  1. Place the dish in the preheated oven and bake for 25-30 minutes until the cheese is bubbly and golden.
  2. Garnish with fresh basil before serving.

Notes

Ensure zucchini slices are of even thickness for uniform cooking. Consider experimenting with different cheese varieties for added flavor.
