  • 2 medium zucchinis Washed and sliced into sticks.
  • 1 cup grated Parmesan cheese For coating.
  • 1 cup breadcrumbs For coating.
  • 2 large eggs Beaten for egg wash.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • Olive oil spray For baking.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and slice the zucchinis into uniform sticks, about 1/4-inch thick.
  3. In a bowl, beat the two large eggs together until well mixed.
  4. In a separate bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, salt, and pepper. Mix them thoroughly.
  5. Dip each zucchini stick first into the egg wash and then into the breadcrumb mixture, ensuring they are evenly coated.
  6. Place the coated zucchini fries in a single layer on a parchment-lined baking sheet and make sure not to overcrowd the pan.
  7. Lightly spray the fries with olive oil spray.
Cooking
  1. Bake in the preheated oven for 20-25 minutes or until they are golden brown and crisp.
  2. Once out of the oven, let them cool for a few minutes before serving.

Notes

Try different cheeses or seasonings like Italian herbs for a unique flavor. Store leftovers in an airtight container for up to 3 days or freeze before baking for up to two months. Reheat in the oven at 375°F for about 10 minutes.
