Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine the peeled and deveined shrimp with salt, pepper, and half of the parsley. Set aside.
- In another bowl, mix together the cream cheese, cheddar cheese, breadcrumbs, green onions, melted butter, and the remaining parsley until well combined.
Assembly and Baking
- Take a shrimp and place a generous spoonful of the filling into the curve of each shrimp.
- Arrange the stuffed shrimp in a buttered casserole dish.
- Bake in the preheated oven for 20 to 25 minutes, or until the shrimp are cooked through and the tops are golden brown.
Serving
- Allow the casserole to cool for a few minutes before serving. Garnish with additional parsley if desired.
Notes
Serve with a fresh green salad, garlic bread, or steamed asparagus. A chilled glass of white wine or iced tea pairs well.
