Ingredients
  

For the casserole
  • 1 pound large shrimp, peeled and deveined Use large shrimp for better texture.
  • 1 cup breadcrumbs
  • ½ cup cream cheese, softened
  • ½ cup shredded cheddar cheese
  • ¼ cup finely chopped green onions
  • 2 tablespoons parsley, chopped Divided - half for the shrimp, half for the filling.
  • 2 tablespoons melted butter
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the peeled and deveined shrimp with salt, pepper, and half of the parsley. Set aside.
  3. In another bowl, mix together the cream cheese, cheddar cheese, breadcrumbs, green onions, melted butter, and the remaining parsley until well combined.
Assembly and Baking
  1. Take a shrimp and place a generous spoonful of the filling into the curve of each shrimp.
  2. Arrange the stuffed shrimp in a buttered casserole dish.
  3. Bake in the preheated oven for 20 to 25 minutes, or until the shrimp are cooked through and the tops are golden brown.
Serving
  1. Allow the casserole to cool for a few minutes before serving. Garnish with additional parsley if desired.

Notes

Serve with a fresh green salad, garlic bread, or steamed asparagus. A chilled glass of white wine or iced tea pairs well.
