  • 4 pieces salmon fillets
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled Can substitute with goat cheese if desired.
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Lemon wedges for serving

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine chopped spinach, feta cheese, cream cheese, minced garlic, olive oil, salt, and pepper. Mix until well incorporated.
  3. Place salmon fillets on a baking sheet lined with parchment paper. Make a pocket in each fillet carefully, ensuring not to cut through completely. Stuff each pocket generously with the spinach and feta mixture.
Cooking
  1. Place the stuffed salmon in the preheated oven and bake for about 20-25 minutes, or until the fish flakes easily with a fork.
  2. Remove from the oven, and serve warm with fresh lemon wedges on the side. Enjoy each delicious bite!

Notes

Leftovers can be refrigerated for up to 3 days. Store in an airtight container to keep fresh. For freezing, keep for up to 2 months. Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes.
