For the Stuffing
  • 2 cups fresh spinach, chopped
  • 1 cup feta cheese, crumbled
  • 1/2 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
For the Salmon
  • 4 pieces salmon fillets (about 6 ounces each) Skin-side down
  • Olive oil for drizzling To enhance flavor

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine chopped spinach, crumbled feta cheese, cream cheese, minced garlic, lemon juice, salt, and pepper. Mix well until all ingredients are fully combined.
  3. Place the salmon fillets on a cutting board, skin-side down. Carefully score the top of each fillet, creating a pocket for the filling.
  4. Generously fill each salmon pocket with the spinach and feta mixture, using fingers or a spoon to pack it in.
  5. Place the stuffed salmon fillets on a lightly greased baking tray. Drizzle a bit of olive oil over the top of each piece.
Cooking
  1. Bake in the preheated oven for about 20-25 minutes, or until the salmon is opaque and flakes easily with a fork.
  2. Remove from the oven and serve hot, garnished with extra lemon wedges if desired.

Notes

Store leftover salmon in an airtight container in the refrigerator for up to 3 days. For freezing, keep it for up to 2 months. Reheat in the oven at 350°F (175°C) for about 15-20 minutes.
